Duties
Gordon is working in Diane Barrett’s laboratory performing research on enzymes in fruits and vegetables. His recent work is on the enzyme pectin methylesterase and its relation to firmness in tomatoes and other vegetables. His studies involve measurements of the thermal activation and inactivation of this enzyme and determinations of the changes in the chemical properties of the pectins that are a result of this enzyme. His other recent projects include improving the methods for quantifying pungency in onions and for measuring the lycopene content of tomatoes.
